How to use it.

There is no wrong way to use Kashmiri chilli, but these three habits get the most from it.

    Bloom it in warm oil or ghee

    A spoonful at the start, on low heat, and the colour releases into the whole dish without turning bitter.

  2. 02

    Stir it into marinades and gravies

    Yogurt, ginger and garlic for tandoori. Slow-cooked onion and tomato for rogan josh and dum aloo. It gives the red you remember.

    Start with less than you think

    The colour is generous and the heat is mild. Add a little, look, then add more.
